What's in them
Nem rán are rice-paper rolls, deep-fried until crisp, filled with ground pork (northern style leans more pork than shrimp), wood-ear mushroom, glass noodles, carrot, and egg, and sometimes shrimp or crab. They are served with a fish-sauce dip.
Where the non-halal element hides
- Ground pork (the usual filling). In the north, nem are typically built on ground pork, so the meat is the issue even though it is mixed in rather than sitting on top.
- Shrimp or crab (in some versions). Some versions add shrimp or crab, which is a shellfish-allergen flag regardless of religion.
- The dipping sauce. The dip is fish-sauce based (see our note on fish sauce).
Because the pork is mixed into the filling, you cannot pick it out, which is what makes nem an ask-first dish.
