Jemaa el-Fnaa After Dark: The Night Market, Done Right
Every evening, the world's most famous square turns into a restaurant with no walls. Around sunset, the orange-juice carts of Jemaa el-Fnaa give ground to rows of numbered food stalls, smoke rises over the storytellers and gnawa drummers, and Marrakech sits down to dinner outdoors. Done right, it is the best night of your food trip. Done wrong, it is a tourist tax with a view. Here is the difference.
The stalls have numbers, and the numbers are the addresses. Nobody navigates the square by name. Locals say "the harira at number so-and-so," the way other cities argue about grill houses. The numbers also make the square honest: a stall that feeds Moroccans nightly cannot afford a bad week.
Pick by queue, not by pull. The stall callers are charming and multilingual, and the strength of their English is not a food rating. The actual rating system is visible: go where Moroccan families are eating, where the grill is crowded and turning over fast. An empty stall with an energetic host is answering its own question.
Confirm the price before you sit. The good stalls run fixed menus with posted prices, and confirming them first is standard practice. Order in rounds rather than all at once; plates land fast and hot when the grill is busy.
What to order: grilled skewers and kefta straight off the coals, harira with dates, merguez, grilled aubergine and tomato salads. The brave-points dish is babbouche, the peppery snail broth Moroccans drink for the spice-steeped stock; try a small bowl from a busy cauldron, or simply enjoy watching others discover it. Finish with chebakia or a slab of sellou from the sweet stalls.
The rhythm of the square: juice and people-watching at golden hour, dinner at full dark when the smoke and drums peak, mint tea on a rooftop cafe terrace overlooking the lights to land the evening. The terraces charge for the view in the tea price, and it is worth every dirham.
